Quiche for Easter

Easter is a time for family and friends to gather and share a meal. We’ve put together a few simple and brunch elegant recipes guaranteed to make this occasion feel special.

Quiches are a beloved brunch brunch staple. Not only are they delicious, but because you can prepare them well before your meal, the morning of is a snap. You can easily pair your quiche with a light salad with baby spring mix and sliced cherry tomatoes and a balsamic vinaigrette to balance the savory flavor of what we like to think of as a savory egg pie.

Two of our favorite quiches for this spring feature seasonal favorite ingredients: lamb and ham.

Lamb and Spinach Quiche

Ingredients:

1 cup cooked roasted leg of lamb, finely sliced (You can find our tips for a flavorful and tender leg of lamb roast here)
3 cups fresh spinach leaves, washed
1 tbsp butter
2 cloves of garlic, crushed
Salt and pepper to taste
4 large eggs
1 cup milk
½ cup feta cheese, crumbled or grated
1 pack puff pastry
2 tbsp pine nuts

Instructions:

1. Preheat the oven to 375°F.

2. In a frying pan, melt the butter and sauté the spinach and garlic. Season to taste and drain in a colander and press firmly to remove any remaining water. Set aside to cool.

3. Line a 9" pie plate with the puff pastry, crimping the top edges if desired.

4. In a large bowl, whisk together eggs, milk, salt and pepper.

5. Add in the lamb and cheese into the pie crust and pour the egg mixture over top. Sprinkle the pine nuts on top of egg mixture.

6. Bake for 35-40 minutes until the center is completely set. Let cool for 5-10 minutes before slicing and serving.

    Ham and Cheese Quiche

    Ingredients:

    1 cup ham
    ½ cup of chopped cooked bacon
    ½ yellow onion thinly sliced
    1 tbsp butter
    Salt and pepper to taste
    4 large eggs
    1 cup milk or cream
    ½ cup Swiss cheese
    1 cup cheddar cheese
    1 pack puff pastry

    Instructions:

    1. Preheat oven to 375°F.

    2. In a frying pan, melt the butter and sauté the onions until golden brown. Set aside to cool.

    3. Line a 9" pie plate with the puff pastry, crimping the top edges if desired.

    In a large bowl, whisk together eggs, milk, salt and pepper.

    4. Add in the ham, bacon, cheese, and onions into the pie crust and pour the egg mixture over top.

    5. Bake for 35-40 minutes until the center is completely set. Let cool for 5-10 minutes before slicing and serving.
