Lamb and Spinach Quiche

This Lamb and Spinach Quiche combines tender lamb with fresh spinach and creamy eggs in a flaky crust. Perfect for brunch, it’s a hearty yet elegant dish that’s easy to make and packed with flavor!
You can easily pair your quiche with a light salad with baby spring mix and sliced cherry tomatoes and a balsamic vinaigrette to balance the savory flavor of what we like to think of as a savory egg pie.

Instructions
Preheat the oven to 375°F.
In a skillet, melt the butter and sauté the spinach and garlic. Season to taste and drain in a colander and press firmly to remove any remaining water. Set aside to cool.
In a large bowl, whisk together eggs, milk, salt and pepper.
Line a 9" pie plate with the puff pastry, crimping the top edges if desired.
Add in the lamb and cheese into the pie crust and pour the egg mixture over top. Sprinkle the pine nuts on top of egg mixture.
Bake for 35-40 minutes until the center is completely set.
Let cool for 5-10 minutes before slicing and serving.
