Chicken Chorizo and Sweet Potato Hash

A comfort food at its best! And it's made in one skillet only!

The combination of the slightly spicy and savory chorizo, the sweet and creamy sweet potatoes, the colorful bell peppers, and the warm spices creates a well-balanced and flavorful side dish that's perfect for the a good side dish or yummy breakfast! It's a blend of sweet, savory, and smoky flavors that many people find very satisfying.

Ingredients

Sweet potatoes, peeled and diced into small cubes
2 medium
Red onion, finely chopped
1 small
Garlic, minced
2 cloves
Red bell pepper, diced
1
Green bell pepper, diced
1
Smoked paprika
1 tsp
Cumin
1/2 tsp
Salt and black pepper to taste

  • Fresh cilantro or parsley for garnish (optional):

Utensils

  • Large skillet

Instructions

Heat a large skillet over medium-high heat and add the olive oil.

Add the diced sweet potatoes to the skillet and cook for about 10 minutes until they become tender and slightly crispy. Stir occasionally to prevent sticking.

If the sweet potatoes are browning too quickly, reduce the heat to medium.

Push the sweet potatoes to the side of the skillet, and in the empty space, add the ground chicken chorizo. Break it up with a spatula and cook it until it's browned and cooked through, stirring occasionally.

Add the chopped onion, garlic, and bell peppers to the skillet. Cook for 3-5 minutes or until the vegetables are softened.

Sprinkle the smoked paprika, cumin, salt, and black pepper over the chorizo and vegetable mixture. Stir to combine, making sure the spices are evenly distributed.

Cook for another 2-3 minutes for the flavors to meld together.

Taste and adjust the seasoning if needed.

Remove the skillet from the heat and garnish with fresh cilantro or parsley if desired.

Optional: If you want to turn this into a breakfast mash, cook up some eggs and top!
