Lamb shanks are one of the most tender cuts of lamb, and when they are pasture-raised, they have a more complex flavor. They come from the back of the animal, between the leg and the rib rack, a tender, lean section. They are excellent simply seasoned, seared, or grilled but also go well with a drizzle of olive oil and fresh chopped rosemary or tzatziki, a light Greek yogurt, and cucumber condiment.
