Mediterranean Roasted Rack of Lamb

The preparation is a breeze – a simple rub with the herb-infused mixture, and then into the oven it goes, allowing the lamb to roast to perfection. The result is a mouthwatering dish that boasts a delightful balance of flavors and a perfectly cooked interior. Whether you aim for a medium-rare or medium doneness, each bite promises a burst of Mediterranean essence.

 

Mediterranean Roasted Rack of Lamb

Ingredients

2 racks (1-1/2 pounds each)
Lemon, grated zest
1
Dried oregano
4 tsp
Garlic cloves, minced

Olive oil
2 Tbsp
Salt
1/2 tsp
pepper
1/2 tsp
Fresh oregano and lemon slices, for serving

Utensils

  • Small bowl
  • Shallow roasting pan

Instructions

Preheat the oven to 375F degrees.

In a small bowl, combine the lemon zest, oregano, garlic, oil, salt and pepper.

Place the lamb in a shallow roasting pan and rub with the herb mix.

Put the lamb in the oven and bake for 30-40 minutes, or until the meat reaches 135F (for medium-rare) or 140F (for medium). Remove from the oven and let stand for 5 minutes before cutting.

Add fresh oregano and lemon slices if desired. Serve and enjoy!
