Loaded Smash Potatoes

Easy, Crispy, Delicious!

Perfect as an appetizer, game day snack, or even a twist on a side dish! Everyone will be coming back for seconds. 

Ingredients

baby gold potatoes
1.5 lbs
cheddar cheese, shredded
1 cup
bbq rub of choice
1 tbsp
salt, pepper, garlic powder
1 tsp
sour cream
1 tsp per potato
green onions, sliced
2 stems

Utensils

  • baking sheet
  • lined
  • large pot

Instructions

Place the bacon on a lined baking sheet and season with bbq rub. Bake at 400°F until nice and crispy (about 15-20 min).

While the bacon is in the oven, boil the potatoes until they are fork tender then strain.

Once the bacon is done, remove it from the oven and place on plate with paper towels to cool. Once cool, chop into bits.

Place the potatoes on the same pan then smash them down. Brush with the bacon grease then season with salt, pepper & garlic powder. Bake at 400°F until golden brown and crispy (about 25-35 min).

Once the potatoes are about done, take them out and add the cheese and bacon bits on top. Place back in the oven for 5-10 min to finish.

Plate them up, top with sour cream, green onions & ENJOY!
