Mozzarella Meatball Bites

A kid-approved twist on classic meatballs! These juicy Grass Roots beef meatballs are stuffed with melty mozzarella and pan-seared until golden brown. The best part? That irresistible cheese pull! Serve them with marinara for dipping, pack them into lunches, or spoon them over spaghetti for an easy, family-friendly meal everyone will love.


Ingredients

String Cheese Sticks, cut into thirds, or Mozzarella chunks

Breadcrumbs
½ cup
Parmesan Cheese
¼ cup
Milk
½ cup
Egg
1
Italian seasoning
1 tsp
Salt
½ tsp
Black Pepper
¼ tsp
Garlic, minced
½ tsp
Onion Powder
1 tsp
Olive oil, for cooking
Marinara sauce, for serving

Instructions

In a large bowl, combine ground beef, breadcrumbs, Parmesan, milk, Italian seasoning, salt, pepper, garlic, and onion powder. Mix until just combined.

Stuff the meatballs by scooping about 2 tablespoons of the mixture and flatten slightly.

Place a piece of mozzarella in the center, then form the beef around the cheese, sealing completely.

Repeat until all the mixture is used.

Cook the meatballs in 1–2 tablespoons of olive oil over medium heat, turning occasionally, until browned on all sides and cooked through to an internal temperature of 160°F, about 12–15 minutes.

Enjoy warm with marinara sauce for dipping, or serve over spaghetti for an easy family dinner.
