Instructions

Note: Ingredient measurements are estimated - feel free to adjust to your taste!

Remove the membrane from the back of the rib rack for better texture and flavor absorption. Then slice the rack into individual ribs.

Lightly coat each rib with hot sauce to act as a binder. Season generously on all sides with your favorite BBQ rub.

Select your preferred cooking method:

Smoker: Place the ribs on a smoker set to 250°F. Smoke for about 2 hours, until the outside begins to form a nice bark.

or

Oven: Preheat your oven to 275°F. Place the ribs on a wire rack over a baking sheet (or directly in a roasting pan). Cover tightly with foil and bake for 2 to 2½ hours, until the ribs are tender but not falling apart.

If you selected the Smoker in the previous step:

- Transfer the ribs to an oven-safe pan. Add a few pats of butter, sprinkle with brown sugar, and drizzle with BBQ sauce. Cover the pan tightly with foil to lock in moisture.

- Move the covered pan to a 275°F oven and cook for about 1 hour, or until the ribs are tender and reach an internal temperature of around 205°F.

or

If you cooked in the Oven

- Remove the ribs from the oven. Transfer them to an oven-safe pan (if not already in one). Add a few pats of butter, sprinkle with brown sugar, and drizzle with BBQ sauce. Cover the pan tightly with foil.

- Return the covered ribs to the oven and bake for another 45 minutes to 1 hour, until very tender and the internal temperature reaches around 200–205°F.

If you enjoy some optional caramelization, uncover the ribs, brush with a little extra BBQ sauce if desired, and broil on high for 3–5 minutes to caramelize the sauce.

Watch closely to avoid burning.

Let the ribs rest for 10 minutes before serving. Enjoy!
