Keto Beef and Broccoli
A savory, hearty dish with a satisfying texture and depth of flavor. The beef is rich and meaty, while the broccoli adds a fresh crunch and vegetal sweetness. The sauce ties everything together with a savory, slightly sweet flavor that is both satisfying and balanced. Serve over a bed of cauliflower rice or another low-carb alternative.

Ingredients

Broccoli florets
5 cups
Avocado oil
2 Tbsp
Yellow onion, sliced
1 medium
Butter
2 Tbsp
Olive oil
1 Tbsp
Soy sauce
1/2 cup
Beef stock
1/2 cup
Ginger, freshly minced
1 Tbsp
Garlic, minced
2 cloves

Utensils

  • Saucepan or skillet
  • Immersion blender
  • or standing blender

Instructions

Heat avocado oil in a pan over medium heat. Add sliced steak and let sit for a minute before stirring to brown. Do not stir too much, as you want it to brown. Cook for another minute. Transfer to a plate and set aside.

Add onions to the pan with the butter and olive oil and cook until the onions are caramelized and tender.

Add the stock, soy sauce, ginger, and garlic to the pan and stir together over medium-low heat until it starts to simmer.

Use an immersion blender to blend the sauce, or transfer to a standing blender. 

Transfer the sauce to a side bowl.

Add the broccoli to the pan with some avocado oil and cook until tender.

Return the beef to the pan (pour in any juices that accumulated) and the sauce, and toss with the broccoli until everything is coated. All done!
