Italian Balsamic Pot Roast

With a nice cut of round roast, it’s so easy to make a delicious slow cooker meal with minimal preparation. This Italian inspired pot roast is flavored with quality balsamic vinegar, rosemary and thyme. Honey and garlic helps to balance the flavors. To make this an all-around complete meal, I added some potatoes to the roast to cook in the juices. Every bite of this dish is packed with so much flavor and the leftovers are even better! 

What You'll Need

1 Grass Roots' Round Roast
1 large onion, sliced
2 carrots, cut into large pieces
1 tsp dried rosemary
1 tsp dried thyme
1 tsp salt 
½ cup balsamic vinegar
2 tbsp honey
6 cloves garlic, minced
1 cup beef broth
2 tbsp olive oil
1 pound baby potatoes, washed but not peeled

The Recipe

  1. Heat olive oil in a pan over medium heat. Season the round roast with salt and pepper on both sides. Sear the meat in the pan for only 4-5 minutes on each side so it gets brown (we don’t want it to cook). 

  2. Place the meat in the slow cooker. Place the onion, carrots and potatoes in the slow cooker as well. In a bowl mix rosemary, thyme, salt, balsamic vinegar, honey, garlic and beef broth and pour it over everything. Close the lid and cook for 8 hours on low.
