Greek Chicken Burger Bowls
We're craving fresh foods with bright colors! The summer farmer's market has plenty to offer us - grab some lemons, cucumber, tomatos, and dill. Whether you're planning a fun weeknight dinner that feels extra special or you're planning a summer party these Greek Chicken Burger Bowls are it! With lemon-dill rice, romaine lettuce, lots of veggies, creamy tzatziki and plenty of feta - you’ll have a Greek-inspired dish that’s SO GOOD. The best part? You can switch up the ingredients however you prefer. Be sure to serve each bowl with hummus and warmed or grilled pita.

- Large Pan
- Pot for cooking rice
- Mixing bowl
- Cutting board
- Knife
- 2 small bowls for tzatziki and dressing
Instructions
Pinch off ~ 1 teaspoon of ground chicken burger and roll into balls. Refrigerate for 15 min. No seasoning needed!
Add butter to a hot pan. Add the meatballs, sear and cook, and then set aside.
Mix the ingredients for the tzatziki and set aside in the fridge.
To make the lemon dill rice, add the chicken stock, salt, and garlic to a small pot and bring to a boil; stir in the rice and then turn the heat down to low and cover and simmer for 20 mins (or until all liquid is absorbed); turn off the heat and stir in the lemon, dill, and butter.
To make the salad, place your veggies in a bowl; whisk together the lemon, red wine vinegar, olive oil, oregano, salt, and pepper in a separate bowl and set aside until the rice cools.
Toss the salad with the dressing and serve it in a bowl with the lemon dill rice, chicken, tzatziki, hummus, and pita.
