If you're craving something crispy, flavorful, and totally delicious, these Crispy Baked Fajita Chicken Tenders are about to become your new obsession! Coated in a crunchy, grain-free chip crust and loaded with flavor, these tenders are super tasty and incredibly easy to make, perfect for a quick weeknight dinner or even meal prep.

Ingredients

Grain-free tortilla chips (ex: Siete)
1.5 oz
almond flour
1/4 cup
fajita seasoning
2 tbsp
sea salt
2 tsp
melted coconut oil (for dipping before “breading”)
1/8 cup
Avocado oil spray
buffalo sauce (for dipping)
buffalo sauce (for dipping) ex: Primal Kitchen

Utensils

  • mixing bowls x3
  • sheet pan

Instructions

Preheat your oven to 400°F and line a baking sheet with parchment paper.

In a food processor, pulse the grain-free tortilla chips until they’re crumbled into fine pieces.

Set up a breading station with three bowls:

  • Bowl 1: Combine almond flour, arrowroot starch, 1 tsp fajita seasoning, and 1 tsp sea salt.
  • Bowl 2: Add melted coconut oil for dipping.
  • Bowl 3: Add the crumbled tortilla chips with the remaining 1 tsp fajita seasoning.

Coat each chicken tender as follows:

  • Dip in the flour mixture.
  • Coat in melted coconut oil.
  • Cover with the chip seasoning mixture.
     

Place the coated tenders on the lined sheet and spray with avocado oil.

Bake for 20 minutes until lightly crispy, then switch to broil for 1-2 minutes, watching closely to avoid burning.

Let the tenders cool for a few minutes, then dip in your favorite Primal Kitchen buffalo sauce and enjoy!
