Ingredients

Grain-free tortilla chips (ex: Siete)
1.5 oz
Almond flour
1/4 cup
Arrowroot starch (or cornstarch)
2 Tbsp
Fajita seasoning
2 Tbsp
Sea salt
2 tsp
Coconut oil, melted
2 Tbsp
Avocado Oil Non-Stick Spray
Dipping Sauce (of choice)

Utensils

  • Mixing bowls x3
  • Sheet pan
  • Parchment paper
  • Food processor

Instructions

Preheat your oven to 400°F and line a baking sheet with parchment paper

In a food processor, pulse the grain-free tortilla chips until they’re crumbled into fine pieces
(You can also crumble by hand in a zip top bag)

Set up a breading station with three bowls:

  • Bowl 1: Combine Almond flour, Arrowroot starch, 1 Tbsp Fajita seasoning, and 1 Tbsp Sea salt
  • Bowl 2: Add 2 Tbsp melted coconut oil
  • Bowl 3: Add the crumbled Tortilla chips with the remaining 1 Tbsp Fajita seasoning

Coat each chicken tender as follows:

  • Dip in the flour mixture
  • Coat in melted coconut oil
  • Cover with the chip seasoning mixture

Place the coated tenders on the lined sheet and spray with avocado oil

Bake for 20 minutes until lightly crispy, then switch to broil for 1-2 minutes, watching closely to avoid burning.

Let the tenders cool for a few minutes, then dip in your favorite sauce and enjoy!
