Sweet Potato Chicken Nuggets

These homemade chicken nuggets are packed with protein, naturally sweetened with mashed sweet potato, and coated in crispy breadcrumbs for the perfect crunch. They’re a family-friendly meal that’s easy to make and great for both kids and adults.

Ingredients

Cooked, mashed Sweet Potato
½ cup
Breadcrumbs
¼ cup
Garlic Powder
1½ tsp
Paprika
1 tsp
Kosher Salt
1 tsp
Black Pepper
½ tsp
For Coating
Large Egg, beaten
1
Breadcrumbs (regular or panko)
1–1½ cups
Avocado oil, for frying

Instructions

In a large bowl, combine the ground chicken, mashed sweet potato, breadcrumbs, garlic powder, paprika, salt, and black pepper. Mix until just combined, being careful not to overmix. Shape the mixture into evenly sized tenders.

Place the beaten egg in one shallow bowl and the breadcrumbs in another. Dip each tender into the egg, allowing any excess to drip off, then coat evenly in the breadcrumbs, gently pressing them on so they adhere.

Heat a thin layer of avocado oil in a large skillet over medium heat. Once hot, cook the tenders for about 4–5 minutes per side, or until they are golden brown, crispy, and the internal temperature reaches 165°F. Transfer to a paper towel-lined plate and serve warm with your favorite dipping sauce.            

Tip: If your ground chicken mixture feels too wet, mix in 1–2 teaspoons of tapioca starch. It helps absorb excess moisture and makes the tenders easier to shape.
