Hearty One-Pot Greek Beef Soup

This hearty, aromatic, cozy Greek Beef Soup (Kreatosoupa) with potatoes and vegetables in every mouthful is sure to be a family favorite. Serve it up with your favorite crusty bread or a simple side salad.

2 lbs, cut into cubes
Extra virgin olive oil
¼ cup
Celery, sliced
2 ribs
Carrots, sliced
3
Pearl onions, frozen
14 oz
Yukon gold potatoes, peeled and cubed
3 medium
Fire roasted tomatoes, diced
14.5 oz
Beef Bone Broth
32 oz
Red Wine Vinegar
¼ cup
Thyme, dried
1 tsp
Garlic Powder
1 tsp
Cinnamon
1 tsp
Allspice
¼ tsp
Ground Cloves
1 pinch
Kosher salt
1 tsp
Black pepper
1 tsp
Lemon, sliced (optional)

  • Large pot with lid

Instructions

Pat the beef dry with paper towels, then season with salt and pepper.

Warm the olive oil in a large pot over medium-high heat. Add the beef and sear until each piece is browned and caramelized.

Stir in the carrots, celery, onions, and diced tomatoes, letting the vegetables mingle with the browned bits at the bottom of the pot.

Pour in the beef broth and red wine vinegar, then add the spices. Give everything a good stir, cover, and let it simmer slowly for about 1½ hours, allowing the flavors to deepen and the broth to turn rich and aromatic.

Add the potatoes and continue simmering for another hour, until the beef is tender and the vegetables are soft and hearty.

Ladle the soup into bowls and top with a few lemon slices or a squeeze of fresh juice for a bright, fresh finish. Serve warm with crusty bread and enjoy every cozy spoonful.
