If you don’t have pre-cooked chicken, season raw chicken breasts with salt and pepper. Cook in a skillet over medium heat for 5-7 minutes per side, or until fully cooked (165F). Let cool slightly, then chop into bite-sized pieces.
In a large bowl, combine the chopped chicken, lettuce, Caesar dressing, parmesan cheese, and croutons. Toss well to coat. Taste and add salt, pepper, or extra dressing if desired. Set aside.
Heat a dry skillet over medium heat and warm each tortilla for 15 - 30 seconds per side until soft and pliable. Transfer to a plate and cover with a clean towel to keep warm. Alternatively, microwave tortillas between two paper towels for 15 - 30 seconds.
Lay tortillas flat. Spoon the salad mixture into the center of each. Fold in the sides, then roll tightly like a burrito. Use a toothpick to hold them closed if needed. Serve whole or sliced in half.
