Chicken Chorizo Breakfast Quesadilla

Ingredients

Avocado oil
1 tbsp
Red bell pepper, diced
1
Jalapeno, diced
1
Red onion, diced
1/2 cup
Eggs
5
Taco seasoning
2 tbsp
Flour tortillas
3-4
Shredded mexican cheese blend
1 cup
--Creamy Cilantro Jalapeno Lime Sauce
Plain greek yogurt
3/4 cup
Sour cream
1/4 cup
Jalapeno, seeds removed
1
Cilantro
1 bunch
Lime juice
1 small
Honey
2 tbsp
Salt
to taste
Garlic powder
to taste

Utensils

  • Frying pan or skillet

Instructions

Get a large skillet going over medium-high heat and spray with avocado oil. Add in the chicken chorizo, break it up and let cook for ~5-6 minutes.

Next add in the diced peppers and onions. Mix and let cook for another ~6-8 minutes.

Beat the eggs then add them to the pan. Season and continue mixing frequently until the eggs are cooked through. Once done, remove them from the skillet.

Spray the skillet with more avocado oil and place down a tortilla. Add a layer of cheese, the chorizo egg mixture and another layer of cheese. Fold it down and give it a flip. Let cook and continue flipping until both sides are golden brown and crispy.

Serve them up & ENJOY!
