Pork and Veggie Breakfast Skillet
You can add an additional fried egg to this breakfast to boost the protein.

Ingredients

Sweet potato, peeled and diced
1/2 cup
Bell pepper, diced
1/4 cup
Onion, chopped
1/4 cup
Spinach or kale
1/2 cup
Olive oil
1 tsp
Garlic powder
1/4 tsp
Paprika
1/4 tsp
Salt and Pepper
to tase
Egg (optional)

Instructions

 

1. Heat 1/2 tsp olive oil in a skillet over medium heat. Add the diced sweet potato and cook for 5–7 minutes until softened.

2. Add the bell pepper and onion. Cook for another 3 minutes, stirring occasionally.

3. Push the veggies to one side of the skillet and add the remaining olive oil. Place the sliced pork chops in the pan, sprinkle with garlic powder, paprika, salt, and pepper, and cook for 2–3 minutes per side until cooked through. Toss the spinach or kale into the skillet and cook until wilted, about 1 minute.

4. If desired, crack an egg into the skillet and cook to your preference (fried or scrambled).

5. Mix everything together or plate the pork chops alongside the veggies.
