Coulotte, also called Picanha or sirloin cap roast, is a hard-to-find and much prized cut from the top of the sirloin. Beef Coulotte is lean but well marbled and is rich, buttery, and savory. We carve ours to include a ¼-½" fat cap, which essentially bastes the meat while it cooks. Our grass-fed coulotte steak is excellent roasted, braised, and smoked, ideally to no more than medium rare. It’s also the cut typically used in Brazilian churrasco and at Argentine steakhouses. You can cut this roast into steaks, which are excellent cast iron seared or grilled.
