It's known for its tender texture and intensely beefy flavor. Because our cattle live their entire lives on fresh pasture, the meat also has a more complex and richer flavor. Often referred to as Delmonico Steak because this thick cut was popularized by Delmonico's restaurant in New York City during the mid-19th century, today Delmonico steak can refer to any thick cut of steak. Serve with herbed butter to follow in the restaurant's iconic recipe footsteps.
