In a large bowl, combine ground beef, salt, pepper, onion powder, montreal steak seasoning and garlic powder until evenly mixed. Form into thin burger patties for double stacks.
In a skillet over medium heat, cook bacon pieces until crispy. Remove bacon from the pan and set aside.
Carefully remove about half of the rendered bacon grease from the skillet.
Add onion and garlic to the remaining bacon grease and sauté until onions become translucent.
Return crispy bacon to the pan and stir in brown sugar, balsamic vinegar, paprika, salt, and thyme. Simmer until the brown sugar is melted and caramelized but still smooth and spreadable.
Grill or sear burger patties until cooked to desired doneness. Top each patty with cheddar cheese during the final minute of cooking.
Assemble burgers on toasted brioche buns with two cheesy patties, a generous spoonful of bacon jam, and pickle slices. Serve immediately.
