Roasted Pear, Brussel Sprouts, and Bacon

- Cast iron skillet
- Paper towel
- Bowl
- Baking sheet
- Small saucepan
Instructions
In a cast iron skillet, cook the bacon until crispy. Cool on a paper towel.
Pour half the bacon grease into a large bowl.
Preheat oven to 400°.
Place Brussels sprouts in the bowl with the bacon grease and toss, adding in the salt and pepper. Add oil if needed.
Spread Brussels sprouts on a baking sheet and place in the oven. Roast for 20 minutes, stirring halfway through.
While the Brussels are roasting, in a small saucepan, add the vinegar and bring to a boil. Reduce the heat to a simmer until syrupy, about 8 minutes.
After 20 minutes, add the pear to the baking sheet, mixing in with the Brussels. Roast for another 10 minutes.
Optional: Turn on the broiler and broil for 2-3 minutes to add additional charr.
Remove the Brussels sprouts mixture from the oven and pour into a bowl. Pour the balsamic syrup on top and toss. Add in the bacon bits. Add additional salt and pepper to taste.
