Roasted Pear, Brussel Sprouts, and Bacon

Ingredients

Brussels sprouts, halved
1 1/2 lb
Olive oil
1-4 Tbsp
Kosher salt
2 Tbsp
Pepper
1 tsp
Pear, cut into 1/2" chunks
1 large
Balsamic vinegar
1/2 cup

Utensils

  • Cast Iron Skillet
  • Paper Towel
  • Bowl
  • Baking sheet
  • Small saucepan

Instructions

In a cast-iron skillet, cook the bacon until crispy. Transfer to a paper towel–lined plate to cool, then crumble.
Pour half the bacon grease into a large mixing bowl and discard the rest.

Preheat the oven to 400°F
Add Brussels sprouts to the bowl with the bacon grease, season with salt and pepper, and toss to coat.
Add a drizzle of oil if needed.

Spread the Brussels sprouts on a baking sheet and roast for 20 minutes, stirring halfway through.

While the brussels roast, bring the vinegar to a boil in a small saucepan.
Reduce to a simmer and cook until syrupy, about 8 minutes.

After 20 minutes, add the pear to the baking sheet and toss with the brussels sprouts.
Roast for another 10 minutes, until the sprouts are browned and the pears are tender.
(For extra crisp edges, broil for 2–3 minutes.)

Transfer the roasted Brussels sprouts and pears to a serving bowl. Drizzle with the balsamic glaze and toss to coat. Stir in the crumbled bacon and season to taste with salt and pepper.
