Utensils

Instructions

Preheat air fryer to 400°F.

 

Rub sweet potato halves with olive oil, salt, pepper, and paprika. Place cut-side down on parchment paper and air fry for 30 minutes.

While cooking, brown the ground beef over medium heat. Halfway through, add salt, pepper, onion powder, chili powder, and optional citrus lime seasoning. Cook until done.

Mix onion, tomato, cilantro, lemon juice, and salt to make the pico de gallo.

Flip sweet potatoes cut-side up and lightly mash the centers.

Top with Monterey Jack cheese, seasoned beef, pico de gallo, and avocado slices.
