Ingredients

Olive Oil
2 tbsp
Juice of Lemon
1/2–1
Zest of Lemon
1/2
Garlic Cloves, minced
3
Rosemary Lemon Salt (or regular salt)
3/4 tsp
Black Pepper
1/2 tsp
Dried Italian Seasoning
1 tsp
Dried Oregano
1/2 tsp
Dried Parsley
2 tsp
Paprika (optional)
Lemon slices (optional)

Instructions

Preheat Oven
Preheat oven to 400°F. Lightly grease or line a baking dish.

Make Marinade
In a small bowl, mix olive oil, lemon juice, lemon zest, garlic, salt, pepper, Italian seasoning, oregano, parsley, and paprika if using.

Season Chicken
Pat chicken thighs dry with paper towels. Rub marinade all over chicken, including under the skin if possible. Let marinate for 10–30 minutes.

Bake
Place chicken skin-side up in baking dish. Bake for 35–45 minutes, or until internal temperature reaches 165°F.

Broil (Optional)
Broil for 2–3 minutes at the end for extra crispy skin.

Serve
Let rest 5 minutes before serving. Enjoy with rice, potatoes, or roasted vegetables.
