Crispy Baked Fajita Chicken Tenders

Ingredients

Tortilla chips of choice
1.5 oz
Flour
1/4 cup
Fajita seasoning
2 Tbsp
Salt
2 tsp
Oil of choice
2 Tbsp

Utensils

  • Baking Sheet
  • Small bowl x3

Instructions

1. Preheat your oven to 400°F and line a baking sheet with parchment paper

2. By hand or in a food processor, crush tortilla chips until they’re crumbled into fine pieces

3. Set up a breading station with three bowls:

  • Bowl 1: Combine flour, 1 tsp fajita seasoning, and 1 tsp sea salt
  • Bowl 2: Add oil for dipping.
  • Bowl 3: Add the crumbled tortilla chips with the remaining 1 tsp fajita seasoning

Coat each chicken tender as follows:

  • Dip in the flour mixture
  • Coat in oil
  • Cover with the chip seasoning mixture
     

4. Place the coated tenders on the lined sheet. Bake for 20 minutes until lightly crispy, then switch to broil for 1-2 minutes, watching closely to avoid burning.

5. Let the tenders cool for a few minutes, then dip in your favorite sauce
