Bring your appetite. St. Louis style pork spare ribs are meatier and have more fat marbling and flavor than baby backs. While their richness pairs beautifully with a sweet or tangy barbecue sauce, they are equally as delicious prepared simply with a seasoned dry rub. While a classic cooking method for St. Louis-style spare ribs is to smoke or grill them low and slow, you can also slow cook them in the oven to achieve that sought-after fall-off-the-bone tenderness. Simply wrap them in foil and cook at 300 degrees for about 2 ½ hours.
