Savory Bone Broth Quinoa
This is one of my favorite easy ways to give quinoa a little more flavor. Cooking it in our chicken bone broth makes it savory and satisfying, and it comes together with just a handful of simple ingredients. Make extra because the leftovers are just as good tossed into a quick lunch bowl.

Instructions
Place the quinoa in a fine-mesh strainer and rinse thoroughly under cold water for about 30 seconds.
This removes its natural coating, which can make quinoa taste bitter.
Heat the butter, ghee, or olive oil in a small saucepan over medium heat.
Add the garlic and cook for about 30 seconds, until fragrant.
Add the rinsed quinoa and toast for 1–2 minutes, stirring frequently.
Pour in the chicken bone broth and add the onion powder, thyme, and black pepper. Stir to combine.
Bring to a boil, then reduce the heat to low.
Cover and simmer for about 15 minutes, or until the broth has been absorbed and the quinoa is tender.
Remove from the heat and keep covered for 5–10 minutes.
Fluff the quinoa with a fork and season with salt to taste.
Stir in parsley, a squeeze of lemon, and Parmesan if desired.
