Instructions
Prepare the Pork: Pat the pork chops dry, drizzle with olive oil, and coat evenly with the ranch seasoning and Italian breadcrumbs, pressing the breadcrumbs gently into the meat.
Cook: Heat a skillet over medium heat with a drizzle of olive oil. Cook the pork chops for 6–7 minutes per side, or until the internal temperature reaches 140–145°F. Transfer to a plate and let them rest for 5 minutes before serving.
Serve: Slice and enjoy with your favorite vegetables or try the Ranch Baby Potatoes below for an easy side dish.
While you're preparing the pork chops, bring a pot of salted water to a boil and cook 1 pound of baby potatoes for about 10 minutes, or until just fork-tender. Drain and let them steam dry for 5 minutes.
As the pork chops rest, heat a little olive oil in the same skillet. Add the potatoes along with any remaining ranch seasoning and cook for about 5 minutes, stirring occasionally, until they're golden brown and crispy on the outside.
The potatoes soak up all those flavorful browned bits left behind by the pork chops, making them the perfect side for this easy weeknight dinner.
