Backyard Chicken Packets

This summer, whether you’re camping, relaxing in the backyard, or just want an easy clean-up meal, try these Backyard Chicken Packets!
Fully customizable, we went with our favorite zesty fajita flavor, but they’re just as delicious with smoky BBQ, bold Cajun, or herby Mediterranean seasoning.
We recommend juicy chicken drumsticks, quarters, or thighs but feel free to use your favorite cut. Make them your own!

Ingredients

- Heavy-Duty Aluminum Foil

- Baking Sheet
Instructions
Preheat grill to medium-high or oven to 400°F
In a mixing bowl, whisk together the marinade of olive oil, lime juice, chili powder, cumin, paprika, garlic powder, salt, and pepper.
Lay out 4 large sheets of heavy-duty foil.
In each, layer sliced peppers, onion, and a piece of corn. Place a chicken quarter on top and drizzle with marinade.
Fold tightly and crimp edges to keep steam in.
Select your cooking method:
Oven: Roast on a baking sheet for 35 minutes, until the chicken is cooked through (165°F internal).
Grill: Place over indirect heat for 30–35 minutes, turning once.
Remove from heat and allow to rest for 5 minutes.
Carefully open foil, top with fresh cilantro, avocado, or your favorite fajita fixings.
Serve with rice, tortillas, chips or just eat straight from the packet!
