Instructions
Rinse and dry the sweet potato, then poke a few holes with a fork.
Drizzle with olive oil and coat with salt, pepper, garlic powder, and paprika and wrap in foil.
Place the potato in the air fryer at 400°F for about 40 minutes, until the outside is crispy and the inside is fork-tender.
While the potato cooks, heat a skillet over medium heat. Add diced onion, bell pepper, and ground chicken chorizo.
Season with salt, pepper, garlic powder, and paprika, then sauté until the veggies are soft and the chicken is fully cooked.
Slice open the sweet potato, stuff it with the chorizo mixture, and top with shredded cheese and fresh avocado.
