  2. Did you know that in large scale processing plants they ship first, test for bacteria that could cause foodborne illness later? We test all products for salmonella and E. Coli and receive the results in hand before sending products to our customers.

  3. Did you know that dry-aging decreases instances of E.coli? Our meat is frozen immediately after packaging. All other cuts of beef are dry aged—a process that not only adds flavor but is also shown to reduce instances of E.coli—and then frozen as soon as aging is complete.
