Our steers are raised on pasture in fresh air and sunshine. They are 100% grass-fed and finished and graze on GMO- free, no-spray fields.

FORESTED PORK

Our hogs live in the wooded areas of our farms, foraging for acorns, roots and other forest treats. They have plenty of water, shade and open areas to roam.

Our chickens and turkeys live outdoors on fresh pasture and are moved every day. Living outdoors and grazing naturally keeps our birds healthy which means we don’t have to treat them with hormones or antibiotics.

This recipe is built around those two ideas, as the Tasso rub we are using is packed full of flavor, and the recipe can be executed with a variety of techniques. Tasso is a spicy ham that can be found in many butcher shops in Louisiana. It is typically made from the shoulder cut of a pig and heavily spiced with paprika, cayenne, thyme and fresh garlic. These flavors will be the foundation for our wing rub.

The wing was once a tough sell for restaurants, usually discarded into the stock pot with the backs and frames and other discarded bones. There isn’t a lot of meat on the wing, and what little is there is usually tough and riddled with connective tissues. Given all of these shortcomings, the demand for chicken wings has continued to grow, and the reasoning is simple: well prepared chicken wings are full of flavor.
