It's an inactive area of the animal so it's very tender. Because our cattle live their entire lives on fresh pasture, the meat also has a more complex and richer flavor. Considered the finest cut at the fanciest restaurants, you can save yourself a hefty price tag and cook it easily at home with our superior quality pasture-raised filet. We recommend cooking it medium-rare to 130 degrees and letting it rest to 135 degrees. A juicy indulgence on its, own, it also pairs beautifully with a little peppercorn cream sauce or a white wine reduction. If you want to make a top-notch carpaccio, sliced very thin, our grass-fed filet mignon would be perfect.
