Slow Cooker Lemon Pepper and Herb Chicken Thighs

This slow cooker lemon herb chicken is the kind of recipe that makes you want to linger in the kitchen. Butter, onions, and garlic slowly cook down with juicy chicken thighs, filling the house with the most incredible aroma. Fresh rosemary and lemon bring a bright, earthy balance that keeps it light but deeply flavorful. By the time dinner’s ready, the chicken is so tender it practically falls apart. Pair it with simple sides like green beans or asparagus and you’ve got a meal that feels rustic, wholesome, and cozy.

Ingredients

Dry Seasoning Mix:
Garlic powder
2 tsp
Onion powder
2 tsp
Paprika
1 ½ tsp
Salt
2 tsp
Lemon pepper seasoning
2 tsp
Black pepper
1 tsp
Dried thyme
1 tsp
Dried oregano
1 tsp
Olive oil
1 Tbsp
Lemon zest
1 lemon
Fresh lemon juice
1 lemon
Fresh rosemary chopped
1 - 2 sprigs
Garlic, minced
2 cloves
Medium onion, sliced
1/2
Butter
½ stick, cut into 4 slices
Chicken stock
½ cup

  • Crockpot
  • Skillet for searing (optional)

Instructions

Optional searing - 

Before cooking this dish in a slow cooker, you can sear chicken thighs skin-side down in a hot skillet with 2 Tbls of olive oil until golden and caramelized.

Placing chicken thighs directly into your slow cooker and drizzle with olive oil.

Coat the chicken with the lemon zest and all the dry seasonings (garlic powder, onion powder, paprika, salt, pepper, lemon pepper seasoning, dried thyme, dried oregano)​​​​​​.

Add minced garlic, onion, butter, fresh rosemary, chicken stock, and lemon juice.

Cover and cook on high for 2–3 hours or low for 5–6 hours, until chicken is tender and your kitchen smells incredible!

Serve whole or shred the chicken.
This meal is is delicious over rice with a side of green beans or asparagus.
