Before cooking this dish in a slow cooker, you can sear chicken thighs skin-side down in a hot skillet with 2 Tbls of olive oil until golden and caramelized.
Placing chicken thighs directly into your slow cooker and drizzle with olive oil.
Coat the chicken with the lemon zest and all the dry seasonings (garlic powder, onion powder, paprika, salt, pepper, lemon pepper seasoning, dried thyme, dried oregano).
Add minced garlic, onion, butter, fresh rosemary, chicken stock, and lemon juice.
Cover and cook on high for 2–3 hours or low for 5–6 hours, until chicken is tender and your kitchen smells incredible!
Serve whole or shred the chicken.
This meal is is delicious over rice with a side of green beans or asparagus.
