Easy Sausage and Egg Breakfast Quesadillas

Start your day with the convenience of this easy breakfast chicken sausage and egg quesadillas—a satisfying choice that's not only simple to make but freezer-friendly too, allowing you to prepare ahead for future mornings.

Use low-carb tortillas, for a high protein low card meal!

Ingredients

Large egg
1
Shredded chedder cheese
1/4 cup
Salt
To taste
Pepper
To taste
Garlic periperi sauce (optional)
To taste
Tortilla
1
Butter
Thin slice

Utensils

  • Skillet

Instructions

On medium heat, cut a thin slice of butter in a skillet and let melt. Add the sausage links. Let sizzle, turning as each side goldens.

Meanwhile, scramble the egg and season with salt and pepper.

When the links are almost done, cut them in half-inch chunks and cook until done, golden and crispy.

Turn the heat down to med-low. Scrape the skillet to remove any browned sausage bits, then add in the eggs and cheddar cheese, and gently stir until mixed with sausages and eggs are at the desired consistency. (The trick to perfect scrambled eggs is never to stop stirring them when cooking.)

When the eggs are done, turn the heat off and top with a sprinkle of more cheese to melt. Grab your tortilla, and put the egg mixture in on one half, then add any sauces (we love garlic periperi sauce with this).

You can put the tortilla in the skillet to crisp up if you prefer or leave it as is. Either is good!
