St. Patrick’s Day Easy Ham & Cabbage

Ingredients

You just need 1 cup (chopped and diced)
Avocado oil
1/4 cup
Onion, chopped
1
Garlic, minced
2 cloves
Head of green cabbage, chopped
1 large
Chicken bone broth
1 cup
Yukon gold potatoes, cut into 1/2 inch pieces

Salt
1 tsp
Ground pepper
1 tsp
Apple cider vinegar
1 Tbsp

Utensils

  • Large Dutch oven (or pot with a lid)

Instructions

In a large Dutch oven (or pot with a lid), heat the avocado oil over medium-high heat.

Add the onion and cook until they begin to brown about 3 minutes.

Add the ham (ham is already recooked) and garlic and stir for about a minute.

Add the cabbage, salt, pepper, and the broth. Bring to a boil, then reduce the heat to a simmer.

Cover and cook. Stir occasionally until the potatoes are tender, about 15 minutes.

Remove the lid and increase the heat to high, stirring until the liquid has evaporated for another 10 minutes.

Add the vinegar. Salt and pepper to taste. Enjoy!
