Coulotte, also called Picanha or sirloin cap roast, is a hard-to-find and much prized cut from top of the sirloin. Beef Coulotte is lean but well marbled and is rich, buttery, and savory. We carve ours to include a ¼ to ½ inch fat cap, which essentially bastes the meat while it cooks. Coulotte is excellent roasted, braised, smoked, ideally to no more than medium rare. It’s also the cut typically used in Brazilian churrasco. You can cut this roast into steaks, which are excellent cast-iron seared or grilled. This grass-fed and finished favorite is nutrient dense, and packed omega-3 fatty acids and CLAs
