Oxtail once came from ox (hence the name) but now comes from cows. It is rich in collagen which when cooked down slowly (or in a pressure cooker) imparts intense beefy flavor and provides some incredibly tender meat in soups and stews. Like spice? Try braising it Jamaican style with scotch bonnets and butter beans.
