Top round steak, also known as inside round, is cut from the top of the round primal and has fine marbling giving it a nice flavor with minimal fat. Because it’s so lean, it’s best to marinate in the refrigerator for two to six hours to help tenderize it. While a grass-fed top round can be slow cooked (like roast beef), these top round steaks should be cooked with a quick high-temp sear, broil, or stir-fry, ideally to no more than medium rare. Slice it very thinly against the grain before serving to maximize tenderness. It’s a delicious cut that holds marinades beautifully. It can also be used to make chicken fried steak.
