This lean, versatile cut comes from the sirloin primal, adjacent to the loin that has the porterhouse and t-bone. Moderately tender with deep flavor and little marbling, our grass-fed and finished steaks also have a more complex and richer flavor. A good sear at high-heat and you have yourself a quick, juicy steak to serve alongside your favorite veg. Great as-is but peppercorn sauce, chimichurri or your favorite steak sauce are great companions. Best cooked to medium-rare.
