This muscular cut from the shoulder is similar to the chuck but has a higher fat content. Ideal for low and slow braising and stewing to create comfort food that serves a crowd. It's a beefy cut, similar to pot roast but leaner, more tender, and carves nicely. And because our cattle live their entire lives on fresh pasture, the meat also has a more complex and richer flavor. Robust seasoning, red wine braises, and mushroom sauces all complement this cut. Our grass-fed beef shoulder roast makes delicious French dip sandwiches with the leftovers.
