Pork neck bones have some meat on them and are popular in Southern cooking in the US as well as further south in the Caribbean. Cook them low and slow for 2-½ - 3 hours and you’ll not only impart delicious flavor into whatever you cook them with (beans, collards, potatoes, etc), but you’ll also have some tender pork meat to enjoy. Serve some rice or grits alongside them and drizzle pork drippings on top. Pork bones offer an affordable way to bring rich meat flavor to the table.
